I have something awesome for you all today :)
I discovered this amazing cookie a year or two ago; My boss brought a tray of them into work, and of course I devoured half the tray lol, and it has been my go to cookie ever since.
I am going to share the recipe with you today so you can see what I am talking about, so lets get started!
Here is what you will need:
– 1⁄2 cup of Butter (or Margarine)
– 1 cup Peanut Butter (I use Crunchy)
– 1 bag of Butterscotch Chips (300g)
– 1 bag of Mini Marshmallows
The first step is to melt together butter, peanut butter, and butterscotch chips on very low heat until mixed, stirring constantly.
Next, you need to let it cool for a bit (not too much, but just enough so as not to melt the marshmallows).
Once cooled a little, you will then stir in the mini marshmallows.
Next, pour into a greased 11″ x 13″ pan (sometimes I use a deeper pan for thicker cookies), and pop it in the fridge.
Once your mixture has hardened, take it out and cut into small (1-1/2″) squares.
